Easy Spinach Quiche

I love trying new recipes with my friends and family. Especially, when it includes brands and ingredients that we already love. When we had the opportunity to try something new using Allen’s vegetables, I was excited. I love quiche but never tried making it at home.

I always thought that it was it was a hard dish to make and was afraid to try to make it. So I decided it was time to try it and I am glad that I did. Easy Spinach Quiche was really easy to make and was amazing! The kids even wanted more! It is so easy to make it is perfect to throw together for last minute guests.

Ingredients

1 10-inch Pie crust, unbaked
1/4 cup Cheddar cheese, grated
1/4 cup Swiss cheese, grated
5 Eggs, beaten
1 cup 2% Milk
1 13.5 oz. can Popeye Spinach, very well drained
1/4 cup Bacon bits, or 2-3 slices bacon, crumbled (optional)
1 slice Red or other mild onion, diced
1 Roma tomato, thinly sliced

Directions

Preheat oven to 425°F. Prepare crust according to package directions. Sprinkle cheese on pie crust. Mix eggs, milk, spinach and bacon, and onion; pour mixture evenly over cheese. Top with slices of tomato. Bake for 15 minutes; reduce heat to 350°F and bake for an additional 20 to 25 minutes until set, or a toothpick inserted in center comes out clean. Remove from oven and let stand 10 minutes. Serve warm with fruit.

I remember my mom always making sweet potatoes only using Princella Sweet Potatoes. She always made sure that they came out perfect and let me steal some miniture marshmallows. She even made sure that she only used Veg-all mixed vegetables for her famous Beef Pot Pie. A family recipe that has been handed down since my Grandfather was a little boy.

    I love quiche, and have always made it as major Holiday breakfast item. Not sure why I keep it for just “special”…hmmm I will be trying your recipe it sounds great!
