These Cider Baked Donuts will be a Hit with Your Guests
Are you looking for a different dessert than the traditional apple pie this Thanksgiving? Make these delicious cider baked donuts in the comfort of your own home this holiday season! These are so good, you might need to make a few batches.
For the donuts:
2 ½ cups flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
2/3 cup brown sugar
1 tsp ground cinnamon
1/4 tsp ground nutmeg
3/4 cup buttermilk
2 cups apple cider (reduced to 3/4 cup)
1/4 cup Colavita Extra Virgin Olive Oil
For the topping:
6 tablespoons unsalted butter, melted
1 teaspoons cinnamon
1/4 teaspoon nutmeg
1/2 cup granulated sugar
Preheat oven to 375°F and oil a donut pan with Colavita Olive Oil.
Mix all the dry ingredients in a large bowl to combine. In a separate bowl, mix together all of the wet ingredients, then add the wet ingredients to the dry and mix. Do not overmix!
Oil a donut pan with Colavita Olive Oil and spoon or pipe the mixture into the donut pan. Bake at 350˚F for 10-12 minutes.
Remove from the oven and cool in the pans for 5 minutes. Remove and place on a cooling rack to cool completely.
While they are cooling, get your butter and cinnamon sugar topping ready: In a small bowl, melt butter in the microwave. Set aside. In a separate bowl, mix together the cinnamon and sugar. Set aside. Once donuts are cool enough to be handled, dip the tops into the melted butter and then quickly into the cinnamon sugar mixture. Repeat for the entire batch of donuts.
