If you know me you’d know that I slather the sunscreen on my kids. I want to protect them from skin cancer now & for the future. Another thing most people don’t realize is that the sun can also cause major eye damage. Water play & skiing are the most damaging to the eyes besides staring straight into the sun, which you should never do by the way! You should wear protective eye gear as often as you can. Easy Spinach Quiche

I love trying new recipes with my friends and family. Especially, when it includes brands and ingredients that we already love. When we had the opportunity to try something new using Allen’s vegetables, I was excited. I love quiche but never tried making it at home. I always thought that it was it was a hard dish to make and was afraid to try to make it. So I decided it was time to try it and I am glad that I did. Easy Spinach Quiche was really easy to make and was amazing! The kids even wanted more! It is so easy to make it is perfect to throw together for last minute guests.

Ingredients

1 10-inch Pie crust, unbaked
1/4 cup Cheddar cheese, grated
1/4 cup Swiss cheese, grated
5 Eggs, beaten
1 cup 2% Milk
1 13.5 oz. can Popeye Spinach, very well drained
1/4 cup Bacon bits, or 2-3 slices bacon, crumbled (optional)
1 slice Red or other mild onion, diced
1 Roma tomato, thinly sliced

Feeling Helpless When Your Child is Sick

I have stared at the screen for several hours. Not knowing how I wanted to start today’s article or even what it would be about. The last week was one of those weeks were nothing went right. My oldest daughter Alexandria got sick last Wednesday night. Nothing that seemed serious. At first, we thought it was just a stomach bug and would be gone in 24 – 48 hours. She is a special kid. When she throws up she doesn’t want to be babied or fussed over. Her favorite thing to say to me when she is sick is “Mom, Leave me alone, just let me puke and lay back down.” She stayed home from school on Thursday. She slept most of the day. No fever. No loss of appetite. Just throwing up and wanting to sleep. Friday was almost the same. Stayed home from school because she was still throwing up. She didn’t sleep most of the day and even wanted to play.  She did laugh and was her funny cheery self and wanted to do her normal routine. Saturday we thought we were in the clear. She got up wanted to eat and play. My mom came over and her and the kids spent time outside playing.

Sunday I called the doctor. Explained to her that my daughter had been throwing up since Wednesday night, but that there was no dehydration, no loss of appetite and other than the throwing up she was her normal self. Her doctor seemed a little puzzled at first that she was just throwing up and no other symptoms.

The only thing I could think of doing was keeping her as comfortable as possible and take care of her. Luckily, Mucinex helped make that task a little easier.
