Italian Pasta Salad
Prep Time: 15 minutes
1 pound pasta, cooked and drained (My kids love the tri-color pasta and it brings a beautiful color to the salad)
2 cups cubed pepperoni
2 cups cubed provolone cheese
2 cups cheddar cheese (I use yellow for contrast in color)
2 cups green olives
2 cups cherry tomatoes, cut in half so its easier to eat
1 cup diced onion
1/4 cup diced red peppers
1/4 cup diced green peppers
1/4 cup diced yellow peppers
For the Dressing:
24 ounces of your favorite Italian Dressing (I use Wishbone Zesty Italian)
1/4 white vinegar (more or less to taste)
1 Tablespoon lemon juice
1. In a large bowl, toss together the pasta, pepperoni, cheeses, olives and veggies.
2. To make the dressing, whisk together the vinegar, lemon juice, salad dressing. Once combined, pour over pasta mixture to coat and toss. Store, covered, in the refrigerator.
You can add or omit ingredients to your taste and liking as well as tried different dressings. Depending on what we are having I change the recipe slightly to go with our meal.
Zucchini Apple Drop Cookies
1/2 Cup Grated Zucchini
1/2 Cup Grated Apples
1tsp Baking Soda
1 Cup Sugar
1/2 Cup Butter
1 Egg Beaten
2 Cup Flour
1/2 tsp Ground Cloves
1/2 tsp Salt
1/4 tsp Nutmeg
1 Cup Chopped Nuts (Optional)
1 Cup Raisins (Optional)
**Preheat oven to 375 Degrees**
How To Make Them:
Start by washing where you plan on making your cookies and your hands. Get all your ingredients and everything you will need to make these YUMMY Zucchini Apple Drop Cookies.
Mix the grated Zucchini, apples, baking soda, sugar, butter and beaten egg together until well blended. You want your Zucchini and Apple mixture to look like the picture below:
In a large Bowl, mix together the flour, cinnamon, nutmeg, cloves and salt.
(Mix slowly you don’t want to make an even bigger mess.)
Once you have all your dry ingredients mix together, slowly pour the zucchini and apple mixture into your dry ingredients bowl.
Mix everything together until well blended. Be sure that there are no lumps. The dough will be a little runny. This is ok Just put your cookie dough into the fridge for about 10-15 minutes until firm.
Drop the cookie dough by teaspoon onto a greased cookie sheet. Bake in the preheated oven for about 12-15 minutes. The edges should be a light brown. Remove your cookies from the cookie sheet and let cool on a wire rack. Put the next set into the oven and enjoy!

1 box of crispix cereal
1 stick of butter (real stuff)
1 cup brown sugar
1/3 cup white Karo syrup
1/2 tsp salt
1/2 tsp baking soda
1 clean brown paper bag (grocery size)
In a microwaveable bowl, melt butter in microwave. When its melted, add brown sugar, syrup, and salt. Mix together well. Put back in microwave and cook for 2 min or until it starts to bubble. Remove from microwave.
Place crispix in brown bag.
Add baking soda to caramel mix and stir till mixed
Pour caramel mix over cereal and shake bag.
Place in microwave for 1 min 30 sec, shake, microwave for 1 min 30 sec, shake.
Once done, pour cereal onto cookie sheet and let cool/dry.
NOTE: If you have a older microwave (1000 watts or lower), please add some more cooking time when microwaving in the bag. The mix should be crispy/crunchy when cooled.
